Harvest passes are scheduled according to the sugar content
in the ripe cherries. Using a refractometer, they monitor and measure Brix levels daily and only harvest when the sugar levels reach above 20 Brix. The ripe cherries harvested are pulped, fermented and washed at the farm level. Then they are taken to dry at a reputable“dry beneficio” (mill), where they are carefully dried and stored. The coffee is stored in pergamino, or with it’s parchment attached. Once all the coffee is dried and stable at 10.5% humidity, it gets ready to ship. Notes of fruit and chocolate with a good rounded body and pleasant mouthfeel.
